Havana Dining
Criolla (Creole) cuisine takes advantage of the island's fertility. Fresh fruits and vegetables, chicken and pork, and fish and crustaceans all go into the kitchen and emerge transformed and tasty. Typical dishes include 'congri oriental' (beans and rice in the style of the east of the island), roast pork (sometimes spit roasted), tomato salads, and sweet desserts. Aperitifs include the famous and refreshing mojito, a cocktail made with mint, white rum, syrup and soda, cooled with copious ice.
When to Visit - Arts and Events
Cuba has some of the finest musicians in the world and the Cubans and their visitors love to dance. Havana holds its carnival in February, boasting the city's own version of the Conga, a vibrant music that stirs the crowds to party. In December Havana hosts both the prestigious International Festival of New Latin-American Cinema and an international jazz festival.
Havana Tipping Advice
Cubans who work in service and tourist industries depend on tips, be they musicians or hotel porters. Conventionally, tips of 10% or so may made to the staff on presentation of a restaurant bill. Tips of $1.00 or $2.00 may be left for a hotel maid (per day), or even for the staff of a hotel buffet. Tipping small (paper) denominations to tour guides and others is appreciated.
